Buffalo Chicken Cheese Dip

This year I've been telling myself I want to try new things, new recipes, new flavors, stepping outside what I already know how to make. That's part of what led me to this buffalo chicken cheese dip. I came across a version of it from @cookinwithmegg on Instagram, and it looked like exactly the kind of thing I wanted to try. It's great game day food, or really any time you want something warm, cheesy, and easy to throw together.
Buffalo Chicken Cheese Dip
Ingredients:
- 1 rotisserie chicken
- 8 oz whipped cream cheese
- 1 cup sour cream
- 1 cup Frank's RedHot Buffalo sauce
- 1 packet ranch seasoning mix
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika, plus more for topping
- 8 oz shredded mozzarella cheese
- 8 oz shredded sharp cheddar cheese
Directions:
- Shred the rotisserie chicken into small pieces using two forks, or a stand mixer (I used my KitchenAid). Shred it fairly small, mine came out a little smaller than I meant to this time, but it still tasted great.
- In a large bowl, combine the shredded chicken, whipped cream cheese, sour cream, Frank's RedHot Buffalo sauce, ranch seasoning mix, garlic powder, onion powder, and smoked paprika. Mix until fully combined.
- Add half of the shredded mozzarella and half of the shredded cheddar to the bowl and mix until combined.
- Lightly coat a baking dish with oil or nonstick spray, then transfer the mixture into the dish.
- Top with the remaining mozzarella and cheddar, and a sprinkle of smoked paprika.
- Bake at 350°F for 20 minutes.
- Switch to broil for about 3 minutes, watching closely, until the top is golden and crispy.
Let it cool off a bit before you dive in, don't be like me and eat it straight out of the oven. Mine was way too hot still, but I couldn't wait. We served it with Doritos, Cheese and Cool Ranch flavors both paired really well, but crackers or veggies work too. Enjoy!
My man loved this dip, it was such a hit I already know I need to make it again.

Can I make this ahead of time?
Yes, you can mix everything together and refrigerate it in the baking dish, covered, up to a day ahead. Add a few extra minutes to the bake time if going in cold from the fridge.
